Easy egg muffin omelettes
Looking for a tasty family friendly meal that is also easy to make? Look no further. This recipe is packed full of good sources of protein and calcium - delicious!
Preparation and cooking time: 35minutes
Serves: 4 Adults
Ingredients:
- 1 red pepper, deseeded and diced
- 50g grated mozzarella
- 6 eggs
- 2 tablespoons of semi-skimmed milk
- 2 tablespoons of chopped parsley
Method:
- Preheat oven to 190°C fan assisted/Gas mark 5.
- Lightly grease a non-stick six cup muffin tray and place the red pepper and grated mozzarella evenly in each muffin holder.
- Beat the eggs together with the milk and chopped parsley. Pour into each cup, levelling to the top.
- Bake for 25-30 minutes, or until golden
- Place the muffins in a plate and serve with mixed vegetable salad
Top tip – For this recipe, you can use any vegetable leftovers.
